Spare Ribs 排骨 500g
Carrot 紅蘿蔔 1 piece
Black fungus 雪耳 1 piece
Fresh dried cured rhizome 生曬淮山 8 slices
Dried lily bulbs 乾百合 2 tbsp
Lotus seeds 蓮子 2 tbsp
Honey dates 蜜棗 1 pieces
Ginger slices 薑片 2 slices
Green Onion蔥 1
Water 水3L
#Instructions:
1. Soak the fresh dried cured rhizome, dried lily bulbs, lotus seeds, and honey dates in water for at least 10 mins to clean them, set aside.
2. Soak the black fungus in water for at least 1 hour until rehydrated, remove the tough stem part, then tear into small pieces, discard the water.
3. Rinse the spare ribs, put them in a pot with ginger, scallions, and cooking wine, add enough water to cover the ribs. The spare ribs should go into the pot with room temperature water and before heating.
4. Once boiling for about 5 minutes, turn off the heat and remove the spare ribs.
5. Pour 3L of water into the pot, add all the ingredients into the pot. Bring to a boil over high heat for 30 minutes, then simmer over low heat for 1.5 hours. Season with a little salt.
6.Done.

- 100-120g salmon fillet, cut into bite-sized piece and marinade with salt and pepper
- 100g soft tofu, cubed
- 3-4 tbsp miso paste
- 1-2 tbsp mirin
- 1-2 tbsp bonito soy sauce 鰹魚豉油
- 2 tbsp dried or instand wakame (seaweed)
- 1 small carrot, peeled and cut into small pieces
- Any vegetable that you like, cut into bite-sized pieces (i use onion, cabbage, fuzzy melon in my case)
- 6 cups water
*Instructions*
1. **Prepare Dashi:** Bring water and all vegetable (except todu) and seasonings to a boil in a pot. then simmer for 5 mins
2. **Add Main Ingredients:** Gently pan dried salmon till golden brown, add into the pot with todu. Simmer around 10 mins until the salmon is cooked.
4. **Add Miso:** Turn off the heat and add miso. Stir gently and let stand for another 5 mins. Do not continue to boil to preserve the miso flavor and nutrition.
5. **Serve:** The soup is ready to enjoy.
Tips: Depending on your taste, please use white miso for a milder taste or red miso for a bolder flavor profile.
